Meal Plan Monday

 
 
Well... the working mom struggle is REAL. Now throw in a working-mom-blogger into the mix and it's a whole new ballgame. But I'm back and I have a game plan for making sure I'm consistently posting. Don't worry -- I won't bore you with tales from my fifth grade classroom because let's be real: I'd much rather share meal plans, stories about my toddler and baby, and mom life in general. So no worries -- I'm back and I'm ready to do all things blogging! 
 
I have been awful the past few weeks at meal planning.  My husband has been out of town for work a lot lately (the last two weeks I think he logged 46 hours of overtime) and my dinner has consisted of cereal. Or chicken nuggets and tater tots. Not-so-healthy! 
 
I'm back this week with some great meals that are easy to make (and even to make ahead -- yesterday I ended up making the BBQ pulled pork AND the ground beef mixture for the cheeseburger quesadillas.) #momwin
 
So here's what's on the plate for this week!
 
Monday:
 
Tuesday :
Buffalo Chicken Meatloaf (leftovers from Sunday)
 
I love meatloaf and I love making up recipes as I go! I suggested Buffalo Chicken Sandwiches to my husband Sunday morning and he suggested maybe I make a Buffalo Chicken Meatloaf, so I said sure (only I was out of Frank's Buffalo Sauce... whoops)! Here's a quick and easy recipe that I made up on the fly! 
 
Buffalo Chicken Meatloaf
1lb ground chicken breast (I like lean)
dried onion
garlic powder
1 egg
2/3 cup oats 
pepper

Mix all of the ingredients together in a bowl. Line loaf pan with aluminum foil and spray with cooking spray (hello easy clean-up!). Pour meatloaf mixture into pan, pressing evenly. Bake at 350 degrees for 35 minutes, checking to make sure it's 165 degrees! Enjoy! 
 
**Normally I use Frank's Buffalo Hot Sauce, but I substituted with the creamy Buffalo Wing Dip because that's what we had in the house. Next time, I would add more -- maybe 1/2 a cup and I would also add some crushed red pepper flakes! I like a lot of heat! 
 
 


 
Wednesday:
Crock Pot BBQ Pulled Pork Sandwiches
 
This is so easy -- all you need is boneless pork chops and some BBQ sauce. Just cover pork chops with BBQ sauce, cook on high for five hours, and then shred! You can serve on a hamburger bun, over rice, or however you like! Quick, easy, and delicious! And you can easily divide the portions and freeze for easy weeknight dinners like I did!  




  
Thursday:
Homemade Pizza
 
Oh you know -- Pillsbury pizza dough, mozzarella cheese, onions, etc... nothing special! ;)
 
Friday: 

I'll be back later this week with my all-natural remedies for sick babies and toddlers and then Friday for a Thanksgiving edition of my Friday Favorites!

  6. I love the Wednesday idea! I like to plan my week on Friday and grocery shop on Saturday. Then I start cooking on Sunday :).

  9. CHEESEBURGER QUESADILLAS!? genius!! Seriously, I would have NEVER thought of that but it's such an awesome idea! :) and I *just* so happen to have some ground beef thawing…. ;)

  15. Our marriage lacked understanding, it was like every normal marriage as long as I didn't say anything that my husband disagreed with or win an argument. Am always trying to know the ins and outs of his life as his wife, and it turned into a huge blow-out.
